It’s this big joke about my incapability to bake cakes. I am no Betty Crocker or Duncan Hines that’s for sure. I can’t even bake a cake in the microwave. Until today.
I was trying to mix up our morning breakfast routine of cereal/waffles/cereal/waffles…. I also was looking for something that didn’t require turning on the oven the first day of summer. Pinterest to the rescue and this amazing recipe for A Cup of Coffee Cake popped up. A fun treat that all of us enjoyed!
{mug} coffee cake
1T of butter
2T of white sugar
1/2 egg beaten
2T sour cream
couple drops of vanilla
1/4c flour
1/8t baking powder
Topping:
1T butter
2T flour
1T brown sugar
1t cinnamon
In your favorite mug, soften the 1T butter in the microwave for 10-15 seconds. Stir in 2 tablespoons of sugar until it’s fluffy and creamy. Add 1/2 beaten egg. Then stir in 2T of sour cream and a few drops of vanilla. Stir in 1/4 cup of flour and 1/8 teaspoon baking powder. For Topping: In a separate ramekin or bowl add 1 tablespoon butter, 2 tablespoons flour, 1 tablespoon of brown sugar, and 1 teaspoon of cinnamon. Mix well with fork and then add crumb mixture to your mug. Microwave for about 1 min 30 sec. It will be very very hot. Let cool for a few minutes and enjoy!
