These Ain’t Your Momma’s Ginger Snaps

A soft chewy cookie that is really easy to make. This is probably my favorite Christmas cookie of 2010.  I end up making them every few days from now until Christmas! Just make sure you don’t bake them too long!

Ginger Snaps

2 1/2 c. Flour

2 tsp. Cinnamon

2 tsp. Ginger

1 tsp. Baking Soda

1/4 tsp. Nutmeg

1/4 tsp. Cloves (ground)

1/4 tsp. Salt

1/2 c. Butter, softened

1/4 c. Shortening

3/4 c. Sugar

1/2 c. Packed Brown Sugar

1/3 c. molasses

1 egg

Preheat oven to 350 degrees. Combine dry ingredients in a bowl.   In another bowl, beat butter, shortening, sugar and brown sugar.  Mix until fluffy.  Beat in molasses and egg. Gradually beat in dry ingredients until blended. With about a tablespoon of dough form a little ball and gently roll in white sugar. Place on  lightly greased cookie sheet. Bake for 9 minutes.
